I was feeling the mood one day when it was a fantastic 80-degree weather (in my opinion perfect). I decided to break out the frozen shrimp I bought on sale and bring back memories of sitting under a cabana along the Oceanside in a resort in Mexico eating Ceviche with ice cold drinks. Ii was the first time I had ever heard of Ceviche and I instantly devoured it. That became my go to every day down while I sat under the cabana taking in the tranquil beauty of the beach. For some reason all of the tourists wanted to hang out by the pool with cocktails in their hands. I found my own peace, with carefully selected music on my MP3 player and a classic romance novel where you knew the plot and anticipated the happy ending. This is a very easy recipe and you can place most everything except the avocado and shrimp into a food processor or chopper. However, I enjoyed the meditative chopping while listening to music.

Here is the mix I came up with to get the cooking vibe going on Spotify:

  1. 2lbs frozen medium shrimp defrosted – peeled, no tails, and deveined (buy it this way)
  2. 2 limes
  3. 1 medium red onion – don’t switch this out for anything other onion
  4. A handful of cilantro to taste
  5. 1 red or yellow pepper. I used about 5 mini peppers from a bag.
  6. 1 large cucumber
  7. 2 avocados cubed (put to the side for the very last step)
  8. Pink sea salt and pepper to taste
  9. 1 to 2 jalapeño peppers (I did just one and diced the other to add on to my own-I like things spicy)
  10. 1 tomato (or 4-5 of the Italian tomatoes). The tomato is importantly, it should be red and ripe
  11. Dice all of the veggies. Cube the avocado. Chop the cilantro
  12. Chop the shrimp into chunks.
  13. Sit outside and listen to music if it isn’t too hot and have a cold drink on hand and simply relax if you are doing everything by hand
  14. Place all of the ingredients; (EXCEPT the cubed avocados) a
  15. Slice the limes in half and add its’ juices into the bowl then gently hand toss
  16. After well blended, toast too make sure you have a winner. THEN add the cubed avocados and gently hand toss again.
  17. Wrap the bowl or put a lid on it and refrigerate for 30 minutes.
  18. Protect it with your life until it has sat and gained it’s flavor
  19. Serve in bowls with tortilla chips, or just eat it with a fork
  20. Continue enjoying the music while you savor the creation you just made
